Cowboy served with garlic butter, onion & potatoes

  • Ingredients for the onions:
  • 4 medium-sized red onions, peeled
  • 1 tbsp Horio Extra Virgin Olive Oil
  • 2 tsp Maldon sea salt
  • ½ tsp Maldon pepper
  • 1 tsp fresh thyme
  • Ingredients for the potatoes
  • 1 packet of small baby potatoes
  • 1 tsp Epic herb & spice mix 40g
  • 1 tbsp Horio Extra Virgin Olive Oil
  • 2 tsp Maldon sea salt
  • Ingredients for the beef steak
  • 1 Irish beef steak with bone in (Cowboy Steak)
  • 2 tbsp Horio Extra Virgin Olive Oil
  • Epic spices with honey 75g


For the onions:

1.Carve the onions into a flower shape on top and marinate with the olive oil, salt and pepper and fresh thyme. 

2. Place the onions in an ovenproof dish and bake in a preheated oven at 170°C for 30-35 minutes.

For the potatoes:

3.Boil the potatoes in plenty of water until they are cooked and soft, for about 25 minutes.

4. Drain them from the water and let them cool. Cut them in half and marinate them with the rest of the ingredients.

5. Bake them on the grill until they are golden brown and serve them with your meal.

For the steak:

6.Cut into 3 large bone-in steaks and marinate them with the olive oil, spices and salt. 

7. Grill for about 15-20 minutes depending on the size and how you want them to be cooked.

8. If you have a thermometer, measure the temperature near the bone where it takes longer. 

9. The ideal temperature to remove it from the grill is 57-59 degrees and you will need to let it rest for 4-5 minutes where it will go up another 3 degrees.

10. Serve with the potatoes and vegetables!
