Sweet potato and Kale curry

INGREDIENTS

  • 750g frozen kale (half bag)
  • 1kg sweet potato fries (1 bag)
  • 3 tbs chopped garlic
  • 2 tbs curry powder*
  • 2 tsp turmeric
  • 1 can coconut milk
  • 1 cup vegetable broth*
  • Maldon salt and pepper to taste
  • 500gr Basmati rice
  • 1 cup chopped onion

METHOD

1. Lightly sear the onion, add garlic, curry powder and cumin. 

2. After 3-4 minutes add the kale for a few minutes followed by the vegetable broth. 

3. When it softens add the sweet potatoes and finally the coconut milk. 

4. Let it boil for 10 minutes and right before serving add the turmeric and salt and pepper to taste.

5. Serve with lime, pumpkin seeds and of course, basmati rice.
