1. Remove the rind from the two brie cheeses and cut into small pieces.
2. Whip them in a food processor or blender for about 5 minutes or until the cheese has become super smooth and creamy (with breaks in between to avoid your processor overheating).
3. Spread the whipped brie on a plate and add a few teaspoons of bacon jam on top.
4. Sprinkle with fresh thyme leaves and chopped pistachios and finish by drizzling some honey
5. Serve with pieces of bread to dip in the whipped brie and enjoy!
