Dumpling Salad

INGREDIENTS

  • For the Dumplings:
  • 12 Bibigo pork and vegetable gyoza dumplings
  • 1 cup shredded cabbage*
  • 1 cup shredded purple cabbage*
  • 1 carrot cut in small pieces
  • 2 chopped spring onions
  • A handful of coriander leaves
  • 2 tbsp Mr. Filberts Indonesian cashews chopped
  • Roasted sesame seeds to serve (optional)
  • For the dressing:
  • 4 tbsp soy sauce
  • 4 tbsp apple cider vinegar
  • 2 tbsp sesame oil
  • 1 tbsp peanut butter
  • 1 tbsp sugar*

METHOD

1. Start by mixing together all the ingredients for the dressing. 

2. Cook the gyoza dumplings according to the intructions and add the chopped vegetables into a big bowl.

3. Top with the dumplings, drizzle with the dressing and finish with some chopped cashew nuts and (optionally) some roasted sesame seeds.
