The grapes, after being cut, remained for 12 hours in
special cold rooms, so that their temperature
reach 15°C. An explosion and a break followed and the
grape mass transferred to red vinification tanks,
for extracting pigments and tannins. Her process
extraction, along with fermentation, lasted 9-14 days. At the end,
only the free flowing wine was collected. Part of the wine
matured for 6 months in French and American barrels
